Description
Red onion is an essential aromatic variety in Moroccan cuisine. Per 100g: 40 kcal, 1.1g protein, 9.3g carbs, 4.2g sugars, 0.1g fat, 1.7g fiber. Rich in Quercetin (antioxidant flavonoid), Vitamin C (7.4mg), Vitamin B6, Folate, and Potassium (146mg). Its purple color comes from anthocyanins, pigments with remarkable anti-inflammatory properties. Red onion is eaten raw in salads, pickled, or cooked.
